In quarantine, everyone has been baking banana bread. We decided to change it up a little bit, and make some banana bread cookies!
These cookies are SO delicious! They are soft and warm and buttery and perfect to serve with a cup of coffee or tea. They taste like a real banana bread but take just a fraction of the time to make.
We use almond flour in our cookies as a lower carb option. But you can sub it for traditional flour or for whole wheat flour. The cookies will be a tad heavier but just as good!
Banana Bread Cookies
Ingredients
- 1 Egg (room temperature)
- 1 Banana (mashed)
- 2 tbsp Coconut Oil (melted)
- 5 tbsp Coconut Sugar
- 4 tbsp Maple Syrup
- 1 tsp Vanilla Extract
- 1 tsp Cinnamon
- 3/4 cup Almond Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Sea Salt
Instructions
- Preheat the oven to 350°. Cover a cookie sheet with parchment paper and set aside.
- Mix the mashed banana, coconut oil, coconut sugar, maple syrup, egg, cinnamon, and vanilla together until smooth.
- Add the almond flour, baking soda and salt and stir to combine.
- Let the dough rest for 5 minutes.
- Scoop out 1 tbsp dough and place on the cookie sheet. Press down on each cookie with a fork.
- Bake for 10-12 minutes until the cookies are golden brown on the edges.
- Remove from the oven and let them cool down completely.
If you don’t have ripened bananas for these cookies, you can do it in the oven! Pop your bananas on a baking sheet, and put them in the oven at 250° oven for 15-20 minutes. You can also try putting your bananas in the freezer for a few hours instead. We haven’t tried the freezer method, but the oven one definitely works.
You can also add some toppings to these banana bread cookies. We’re thinking of trying it out with some mini chocolate chips and maybe some nuts. We’ve been eying the new Lily’s white chocolate baking chips and think it’d be so good in these cookies!
