We’ve been cooking a lot more often at home, but one thing that still remains the same is that we like to make simple, easy dishes! We’ve been really into roasted veggies recently, so we decided to make a healthy roasted vegetable pasta!
This pasta is incredibly delicious and versatile! We used chickpea pasta because it has a bit more protein plus it’s a lower carb swap, but you can use any pasta you have on hand. Same with the veggies. Feel free to play with whatever you have on hand! You can also enjoy this dish cold, which is perfect for hot summer days.
Roasted Vegetable Pasta
Ingredients
- 3 tbsp olive oil
- 1/2 onion (chopped)
- 1/2 zucchini (chopped)
- 1 cup cherry tomatoes (halved and quartered)
- 1/2 tsp garlic powder
- 1/2 tsp oregano
- 1/4 tsp thyme
- Salt & pepper to taste
- 2 cups pasta*
- 1/4 cup pesto**
- Basil and 4-5 cherry tomatoes to top
Instructions
- Preheat the oven to 400 degrees.
- Place the zucchini, cherry tomatoes and onion in a baking pan.
- Add the oil, garlic powder, oregano, thyme and salt and pepper and toss to combine.
- Put in oven and roast for 20 minutes.
- While the veggies are cooking, prepare the pasta according to package direction.
- Drain, leaving around 1 Tbs cooking water.
- Add the pesto and toss to combine.
- Add the roasted veggies and toss.
- Cook for 3 more minutes.
- Serve & top with basil and fresh cherry tomatoes!
Notes
To make this dish gluten-free, use a gluten-free pasta. We prefer using Banza pasta or Explore Cuisine pasta or other lower carb swaps.
You can also make this vegan and dairy-free by using a vegan pesto. We love the vegan kale pesto from Trader Joe’s. We’ve also made our own pesto before! This is a great easy, vegan pesto recipe!
If you’re making this dish and want to add a meat, you can add some chicken sausage or rotisserie chicken! Both would be great with the pasta and pesto.
