To be honest, we’ve never had the McDonald’s Shamrock Shake. But either way, we wanted to come up with a healthy Shamrock Shake that was green, festive, and delicious!
We don’t know how exactly this shake stacks up to a regular Shamrock Shake, but we loved how it tasted! Plus it was super easy and fast to make.
We topped ours with coconut cream, mint, and some shaved chocolate pieces! We actually made the mistake of just topping our shake with the coconut cream, which made it sink to the bottom. Whipping it will make it much lighter! You can add some stevia to the coconut cream if you wanted to sweeten it. You can even make the whipped coconut cream ahead of time and then let it sit in the fridge to harden.
Healthy Shamrock Shake
Total Time: 10 minutes
Vegan, gluten-free
Ingredients:
1 overripe large frozen banana
¼ tsp pure peppermint extract
1 cup milk of choice
¼ cup spinach
Lily’s Dark Chocolate Baking Bar, or other cacao nibs or chocolate chips
Coconut cream, chilled overnight (optional, for topping)
Mint (optional, for topping)
Instructions:
- Add banana, peppermint extract, and spinach to blender.
- Add milk. Canned coconut milk will make it creamier, but you can use a lighter milk like almond milk as well! It’ll just be a lighter shake.
- Add cacao nibs or chocolate chips. We like to use Lily’s chocolate since there is no sugar added. We chopped up part of a dark chocolate baking bar.
- Blend until all smooth.
- Take chilled coconut cream and whip in a mixing bowl.
- Pour shake into a glass. Top with whipped coconut cream, mint, and some shaved chocolate! Enjoy!
