With summer around the corner, we love to make lighter dishes for the hotter weather like these healthy shrimp tacos! They’re quick and super easy to make. They’re perfect for a summer bbq or a dinner.
We used corn tortillas, so they are gluten-free. But if you’re looking for a lower carb option, try lettuce wraps or jicama wraps! We love the jicama wraps from Trader Joe’s. They work perfectly for shrimp tacos since it adds a nice crunch to the tacos.
We’ve also included an option to make the yogurt cilantro dressing dairy-free! You can use a dairy-free Greek yogurt or avocado. Both make the dressing creamy and delicious. Primal Kitchen also makes a cilantro lime dressing that is dairy-free, soy-free, and gluten-free, if you wanted to us something pre-made.
We made these without a salsa, and they are delicious without it! But if you wanted to add a salsa to these tacos, a mango salsa would be perfect since the sweetness of the mangos will balance the shrimp perfectly.
No Bake Cherry & Chocolate Energy Balls
Equipment
- Food processor
Ingredients
- 1 cup Almond flour
- 3 packets Timeline Nutrition Berry Powder
- 3/4 cup Dried tart cherries
- 3/4 cup Pitted dates (chopped)
- 1/4 tsp Vanilla extract
- Pinch of Sea salt
- Chocolate chips
- Shredded coconut for rolling
Instructions
- Combine all ingredients, except for coconut, in a food processor. Process until well-combined & sticky when pressed together.
- Form into 1-inch balls.
- Roll each ball into shredded coconut.
- Chill for 1 hour. Enjoy!
