One of our favorite dishes we make for a holiday dinner is creamed spinach! Our whole family loves it. But this year, we decided to make a keto creamed spinach and omitted the flour that we usually use to thicken it. Instead, we used heavy cream and cream cheese to thicken it and keep it low carb.
It’s a very easy and quick recipe to follow! It only takes about 15 minutes to cook and is delicious and creamy. This keto creamed spinach is perfect for anyone who is following a low carb diet, gluten-free, or no specific diet at all!
You can also use frozen spinach instead. But thaw and drain it well first. Squeeze to get rid of the extra water.
You can also make this in advance by preparing it, then letting it cool completely. Then, cover and refrigerate for 1-2 days. When you’re ready to serve, just reheat in a pan over low heat, stirring occasionally.
Keto Creamed Spinach
Ingredients
- 2 Tbsp butter
- 6 garlic cloves (minced)
- 6 Cups baby spinach (chopped)
- 1/2 Cup heavy cream
- 1/3 package cream cheese
- 1/2 Tsp onion powder
- 1 Tsp Italian seasoning
- 1/4 Tsp dried thyme
- Salt & pepper to taste
- Parmesan cheese
Instructions
- Melt the butter in a large pan over medium heat.
- Add the garlic clove and sautee until fragrant, around 1 minute.
- Add the spinach and cook for 3 minutes, or until the spinach begins to wilt.
- Pour the heavy cream, cream cheese, and the spices and stir to incorporate.
- Cook until the cream cheese has melted and is fully incorporated.
- Season with salt and pepper, and top with parmesan cheese.
