Is everyone over pumpkin already?? Are we all supposed to have moved onto peppermint and other holiday flavors? Well, we didn’t get our pumpkin fix in fully this fall, so we’re still going to be here making some pumpkin foods, like these keto pumpkin spice bars, until we’re sick of it. Plus it barely feels like fall yet in LA!
These keto pumpkin spice bars are great because they’re low carb and low sugar! We don’t love overly sweet treats, so these are perfect for us when we want a sweeter breakfast or snack AND it also can work as a dessert for us.
Keto Pumpkin Spice Bars
Ingredients
- 1/3 cup pumpkin puree
- 1/3 cup coconut oil
- 2 eggs
- 1 tsp vanilla extract
- 1 cup almond flour
- 2 tsp baking powder
- 1/3 cup sweetener ((We used allulose))
- 1 1/2 tsp pumpkin pie spice
Instructions
- Preheat the oven to 350 degrees. Grease a baking pan and set aside.
- In a bowl, beat the coconut oil with the allulose. Add the eggs and continue beating until incorporated, around 3 minutes.
- Stir in the pumpkin pie spice, vanilla, and pumpkin puree.
- Add the almond flour and baking powder. Continue beating until the mixture is fully incorporated.
- Transfer the batter to the prepared cake pan.
- Bake for 25 minutes or until done.
- Let it cool down completely before slicing into bars
