After Jo made a spicy strawberry serrano margarita, we decided to test out new cocktail recipes for a new series on our IGTV, called “Quarantini with Jo.” The whole point of “Quarantini with Jo” is to use ingredients you likely have at home already, so you’re not out looking for ingredients! So, for her first cocktail, she made a low sugar mojito.
Low Sugar Mojito
Ingredients
- 2 oz rum
- 4 oz lime White Claw ((or any other hard seltzer or soda water))
- 8-10 mint leaves
- 1 lime
- 2 tbsp monkfruit sweetener simple syrup ((equal parts Lakanto monkfruit sweetener and water))
Instructions
- Make monkfruit sweetener simple syrup. In a pot, mix equal parts Lakanto monkfruit sweetener and water. Heat and mix until melted into the water. Do not boil. Pour into a bowl and put in fridge to cool.
- Take 8-10 mint leaves & muddle with a wooden spoon at bottom of a cocktail shaker.
- Squeeze in 1/2-1 lime.
- Add 2 oz of rum.
- Then add 2 tbsp of monkfruit sweetener simple syrup.
- Add ice and shake.
- Pour over crushed ice.
- Top with 4 oz of lime White Claw.
- Add mint & lime to garnish.
You can also use a regular simple syrup (mixing equal parts sugar & water), but it would no longer make this drink as low sugar or low carb. Also, monkfruit sweetener is sweeter than sugar, so you may need more of the regular simple syrup.
