I recently found an easy microwave keto English muffin recipe. I was shocked at how simple and fast it was! It took about 3 minutes total, AND it was paleo and low carb. It was also perfect because it made exactly enough for me, so I didn’t need to buy a whole package.
But unfortunately, they were a little dry for my taste, so I decided to test out making my own! I tested this out, and it was perfect for my breakfast. I made 1 savory with avocado and Trader Joe’s Everything but the Bagel seasoning and 1 sweet one with a little Justin’s almond butter & jam on top.
Microwave Keto English Muffin
Ingredients
- 4 tbsp almond flour*
- 1 tbsp coconut flour
- 1/8 tsp baking soda
- 1 tbsp almond milk
- 1/4 tsp salt
- 1 egg
- 1 tsp coconut oil (melted)
Instructions
- Mix all ingredients together.
- Pour into a mug or small ramekin.
- Microwave for 2 minutes. It will come right out of the mug or dish easily.
- Slice, toast, add your favorite toppings, and enjoy!
Notes
The first one I made I used blanched almond flour, and this time I used natural almond flour (has the skin of the almonds) since that’s all I had. I honestly didn’t mind the natural almond flour, but I think I would use blanched almond flour next time just for the taste. It will be white if you use the blanched.
But the great thing is I don’t think I would buy a packaged English muffins for myself again because this is just so easy and so much healthier than most of the options at the grocery store. It probably takes more time to take out all the ingredients from your pantry than it does to make it, which is mind-blowing to me.
