For the longest time, we hated fruit in our salads. Not sure why, but we would always skip over the salads with fruit in them. Then we finally realized they taste so good in a salad! They add the perfect amount of sweetness. Since it’s still summer (and seriously feels like it in LA), we decided to make a delicious stone fruit salad!
This is the perfect summer salad. It’s light and so refreshing. The peaches and balsamic glaze add the perfect sweetness. We cooked our peaches on a pan over our stove, but they would taste amazing grilled as well!
To make it vegan or dairy-free, you can choose to not include the blue cheese. But we found that it paired really nicely with the peaches and lettuce!
Stone Fruit Salad
Ingredients
- 1 head lettuce (chopped)
- 2 firm peaches (quartered, pitted, and peeled)
- 1 tbsp butter or olive oil
- 1/4 cup walnuts (chopped)
- 1/4 cup blue cheese (crumbled)
- salt & pepper to taste
For the balasmic glaze:
- 2 cup balsamic vinegar
- 1/4 cup honey
Instructions
- Prepare the balsamic glaze. In a small pot, over medium heat, mix the balsamic vinegar and the honey. Bring to a simmer and cook, stirring occasionally for around 20 minutes until the vinegar has reduced and thickened. Remove from heat and transfer a glass jar.
- Prepare the peaches. Heat the butter or olive oil in a small pan over medium heat. Add the peaches, and cook for around 2 minutes per side. Sprinkle with salt and pepper, and remove from heat.
- Assemble the salad. Start by making a bed with the lettuce, top with the peaches, walnuts and blue cheese. Drizzle with the balsamic glaze and serve.
